Rambling #11 Cookie Time!

So in our household the desired cookie by most of my family is Oatmeal Raisin. Now I know people hate on this cookie because of all the healthy ingredients that go into this cookie but done right (and with the recipe of the Quaker Oats lid) they are absolutely delicious!!!! So I thought I would share with you the recipe on top of the lid! It's called:

Vanishing Oatmeal Raisin Cookies
(its pretty much what happens at our house)
The ingredients I know it looks like a lot but here they are: vanilla, salt, cinnamon, sugar, butter or margarine (I prefer the latter it makes the cookies better and not so flat and hard), brown sugar, eggs, flour, baking soda, oats, and raisins. I am pretty sure you can add chocolate chips if you would like.

Preheat oven to 350.
First in a medium size bowl mix together the flour
baking soda
salt
and cinnamon
mix it up good, like so
In a mixer mixing bowl cream together the sugar
brown sugar
and butter or margarine

add the eggs
and vanilla and mix again

Then add the four mixture and mix
Add the oats and mix

And finally add the raisins (now the recipe says to stir them in by hand but I'm lazy and I use the mixer)
Ummmmm! Yummy! After it's all mixed I like to chill the dough in the freezer for about 20-30 minutes. This will help with scooping and with your cookies not flattening out tooo much.
Next on parchement lined cookie sheets I use a 1 inch scooper to create cookie dough droplets

Here is a tray that is ready for the oven. Just pop them in for 8-10 minutes.
Here they are done. On oatmeal raisin you want to pull them out when the tops are not quite brown. These will continue to cook them selves and brown up after removed from the oven. If you wait for them to be brown in the oven you will burn them and they will be hard.
Here they are all perfect and soft!
I usually remove them to a wire rack after about 2-3 minutes to cool down completely.
We store them in a cookie jar for like the next two days until they are all gone. Here is the recipe as it appears on the lid. You can click the picture to enlarge it but I will also type it out below.

Vanishing Oatmeal Raisin Cookies

1/2 lb (2 sticks) butter or margarine, softened
1 cup firmly packed brown sugar
1/2 cup sugar
2 eggs
1 teaspoon vanilla
1 1/2 cups flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
3 cups Quaker Oats
1 cup raisins

Preheat oven to 350. In a medium bowl mix together flour, baking soda, cinnamon, and salt, set aside. In mixer cream together sugars and butter/margarine. Add eggs and vanilla, beat well. Add flour mixture and mix well. Add oats, mix well. Add raisins, and mix. Scoop by rounded tablespoonfuls onto greased cookie sheet. Bake for 10-12 minutes (our oven it is about 8 and a half minutes). Wait one minute and then remove to wire rack to cool completely.
